Cauliflower with Cheese Sauce

Ingredients
1¼ cups milk
30g butter
1 tablespoon flour
sea salt
pinch ground white pepper
65g gruyere or cheddar cheese, grated
1 small fresh white cauliflower
Method
Select Fan Grill on your oven and set the temperature to 180°C.
To make the sauce, heat the milk in a small saucepan or in your Smeg microwave. Slowly melt the butter in another medium saucepan and when melted, stir in the flour and allow to cook at a low temperature for 1–2 minutes.
Gradually whisk in the hot milk and then stir until just below the boil; adjust seasoning with salt and pepper. Remove from heat, add cheese and stir until smooth.
Blanch the cauliflower in boiling salted water for about 4 minutes, until just cooked and still slightly firm. Remove from heat, drain and place into a shallow baking dish.
Pour the cheese sauce evenly over the cauliflower and then place under the grill until the sauce is golden brown. Serve immediately.
