Asparagus Wrapped in Prosciutto

Ingredients
24 fresh asparagus spears
12 slices prosciutto, cut in half lengthways
sea salt
freshly ground black pepper
3 tablespoons olive oil
3 tablespoons balsamic glaze
Method
To prepare the asparagus, trim the ends and lightly peel with a vegetable peeler. Plunge into salted boiling water for one minute, then refresh in cold water to stop the cooking and lock in the colour. Place to one side.
Select Fan Grill on your oven and set the temperature to 200°C.
Wrap each asparagus spear in a slice of prosciutto, lightly season with salt and pepper and place onto the grill rack inserted into the grill tray.
Place into the oven on shelf 4 and allow to grill for about 8–10 minutes or until the prosciutto starts to crispen and the asparagus is slightly coloured. Remove from the grill and place 6 asparagus spears onto each plate. Season with salt and pepper and a swirl of olive oil and balsamic glaze.
Serve with a large fresh salad and crusty hot bread.
